Everything from TFS is made by hand in small batches using as many locally sourced or handmade ingredients as possible. All snacks are made without gluten, reduced amounts of sugar, and include some dairy-free options too.
TFS has a passion for reducing food & packaging waste, connecting with other local businesses, and sharing well made, gourmet snacks with all people. Magic for Cheese.
About Shannon,
TFS Founder
Shannon is new to New York state by way of California. She spent 14 years working in TV production, mainly in game show prizing, and got her start in news. She left California to be closer to family and to pursue a passion that benefitted her family in a sustainable way.
As a gluten free diabetic, she has been studying and researching GF, low glycemic foods for the better part of a decade and discovered two things – 1) everything is better when she just makes it herself and 2) cheese doesn’t solve problems, but it certainly helps.
Shannon is a trained cheesemonger via Whole Foods Market. She discovered a love of cheese and a new passion for pairing after spending a summer assisting with the culinary program at The Inn at Stockbridge in The Berkshires – testing recipes on guests, tasting local ingredients, and meeting local merchants.
She is currently a manager for Taste NY/Cornell Cooperative Extension, bringing a passion for local connections and local food into everything she does.
TFS is an extension of Shannon – always evolving, trying new things, and hardcore fancy snacking.

A cheese plate is the easiest way to accommodate all dietary restrictions - even dairy free. With so many interesting and high end dairy free ‘cheese’ options on the market, I wanted to make sure there was a range of snacks to accommodate.
